This pie was embarrassingly quick and easy to make, but it ended up with the most views on my Instagram page, so I had to put up the recipe.
Take one refrigerated pie shell and place in the bottom of a pie tin. Add two cans of blueberry pie filling, plus the zest and juice of one lemon. Cover with the remaining pie shell and brush that shell with the beaten white of one egg. Sift granulated sugar over the pie shell with a spoon. Bake at 350° for about 30-45 minutes until it is nicely golden brown.
Serve with vanilla ice cream.
