It’s always a lot of fun to watch Boar’s Night Out compete. They have a huge team of serious and fun cooks. Their food is no joke. But they’re pretty lighthearted about how they go about competing. And it’s always fun to see someone take a blowtorch to a hog. Here’s a bunch of photos of them in action, taking their 4th win at Pigapalooza at the American Royal in Kansas City raising money for Operation BBQ Relief.
I got there early in the day, so I got to see a lot of the prep.
Now that the hog is ready, it’s time for the show. Eric Hodson is the ringleader.
Cutting into that thick lacquered hog skin.
If you look closely in the pic below you can see the spray from how juicy it is!
The judges get a taste.
It’s a hot one.
But a tasty one.
Look at that beautiful lacquer.
Eric decides to light it up, porchetta style.
Which he serves with chimichurri.
Time for some tenderloin. This is my favorite picture of the weekend, by the way:
It’s a juice beast.
Time to break it down.
One more close up.
Fourth win in a row at Pigapalooza!
